Why matcha is shade grown
Matcha plants are covered for three to four weeks before harvest, cutting sunlight by up to about 90 per cent. The shade slows the plant down and changes the leaf: L-theanine and chlorophyll rise, bitter catechins fall. That is what gives matcha its sweet umami taste and vivid green colour, and what separates it from ordinary green tea.
What are kabuse and tana shading
There are two ways to shade a tea field, and the difference shows up in the cup and in the price.
Kabuse means laying the covering straight over the bushes. It is cheap, quick and usually run for a shorter period, and it produces kabusecha and lower-cost tencha. Tana means building a frame over the rows and suspending the cover about two metres above the plants, so air moves underneath and the shade is more even. Tana is the traditional method for top-grade tencha and gyokuro, and the traditional covering is layered reed screens and rice straw (honzu), added in stages so the darkness deepens gradually. Most modern fields use black synthetic mesh instead, in one or two layers, for a fraction of the labour.

How long are matcha plants shaded
Three to four weeks before the first spring harvest is the standard for tencha, and the best fields run longer, sometimes past five weeks with the cover deepened in stages. Shorter shading is not a free shortcut: the chemistry needs time, and a fortnight under mesh produces a noticeably less sweet, less green leaf than a month under honzu.
The timing matters as much as the length. Shading is applied to the new spring growth in the run-up to ichibancha, the first harvest, which is why first-harvest leaf and high grade so often mean the same thing.
What does shading do to the chemistry of the leaf
Tea plants make L-theanine in the roots and send it up to the leaves, where sunlight drives its conversion into catechins, the compounds behind green tea's astringency and bitterness. Take the light away and that conversion slows, so L-theanine accumulates in the leaf instead. At the same time the plant compensates for low light by producing more chlorophyll, which is why shaded leaf is a deeper green than sun-grown leaf.

Is shading what makes matcha different from green tea
It is the first and biggest difference, though not the only one. Matcha and sencha come from the same plant, Camellia sinensis. The split starts in the field with the covers and continues through processing, where matcha leaf is dried flat into tencha, stripped of stems and veins and stone ground, while sencha is rolled, dried, then steeped and thrown away. Take the shading away and even perfect processing cannot produce matcha's sweetness or colour.
Does more shading always make better matcha
Up to a point, and then it stops. Longer shading costs the grower real money: yields drop because the plant grows more slowly under cover, labour goes up, and pushed too far the bushes are stressed enough to affect the following season. Growers therefore balance shading against yield rather than maximising it, and cultivar, soil and harvest timing shift the result too.
For a buyer the signal is indirect, because nobody prints shading hours on a tin. What you can judge is the outcome: a deep green colour, a sweet grassy aroma and low bitterness in the bowl, plus a first-harvest or ceremonial claim from a producer who names the region.
